the perfect winter dinner should be nutritious, warm, comforting, light on the body and filling at the same time. as ayurveda says our agni or digestive fire is at its highest during this time. what more to ask from a meal if it also has detoxifying properties. one dish that I regularly prepare which has all these criterion is a dish with baked veggies. yes veggies are available all year around. however winter veggies like carrots, broccoli, zucchini greatly enhances the options for the vegetarian eater. this also serves as a detox dinner for a busy person as it doesnt require that much of an effort and gives excellent results.
recipe – 1 carrot diced medium size. a small zucchini diced, onion 1 small sliced, tomato 1 diced, mushrooms (optional) 5-6, broccoli small flower cut into medium sized pieces and cabbage (diced) about 1/2 cup. All veggies to be layered in a dish (metal/glass) with carrots and onions on the bottom, broccoli and tomato in between with zucchini or mushrooms and cabbage on top for some crispy bits. Bake for 200 degree for 20 min . serve hot after seasoning with black pepper . add Salt if required. curd/white butter can be added for kids.
