Ayurvedic Cooking Recipe
1 pinch Saffron soaked in 1 tbsp milk
1/2 cup ghee
2 cups Finely grated sweet potatoes
8 cups milk
1 tsp Kalonji ( Nigella Seeds)
1 tsp Sesame seeds
2 green cardamom
1/2 tsp grated ginger (optional)
1 cup jaggery powder
Method
Soak the saffron in 1 tbsp of milk for 10 mins.
Peel and wash sweet potatoes, grate finely
Heat a large wok, add the ghee.
Saute the grated sweet potatoes for till they turn light brown and fragrant
Pour the milk over the sweet potatoes slowly, stirring continuously.
Add the Kalonji seeds, sesame seeds, cardamom, soaked saffron and jaggery powder
Keep stirring as the kheer thickens to keep it from stickingCook for about 5-10 minutes at a gentle boil.
Turn off the heat and cover until ready to serveServe hotGarnish with diced almonds / cashews (optional)
