Tangy, Healthy Tamarind Rice Recipe

Today is Buddh poornima
To celebrate the life of a true yogi Gautam ‘Buddh’, Buddh was one of the revered sages of the Golden period of Ayurveda , as Buddhism
Spread so did yoga & Ayurveda

He is honoured by all vaidyas and is revered in Ayurveda for his teaching

Although tradition suggests that we ought to make sweet rice pudding today, I wanted to make something refreshing so opted for Tamarind Rice

Pre prep –
Boil 1cup rice
Soak tamarind 20g
.
In a steel wok take some sesame/mustard oil, add some black pepper 1-2 cloves 1 Tejpatra, black mustard seeds (rai) and kadi patta
And peanuts (optional) (avoid in. Ase of allergies)
Replace with white gram
.
Add finely chopped seasonal veggies (today I added carrots,zucchini and some mushroom)
.
Add salt according to taste a pinch of turmeric & red chilli (optional)
Cook till soft
Add water from soaked tamarind to
the pan and

Then add 1 cup boiled rice
Serve hot

Coriander fresh for garnishing
