Delightful Pumpkin Surprise – Gold standard Ayurvedic recipe

Pumpkin chutney

So the pumpkin is another gold standard ayurvedic ingredient, one should cook more with in the kitchen,
It is rich in Magnesium , copper & potassium
And high in fibre & vitA
It pacifies all three doshas and is great for keeping hunger of the Pitta at bay
It is a must for summer regimen as it is cooling & refreshing
But admit it we all have difficulty feeding this to our children
So here’s a recipe
That has been adapted for the modern living with ancient roots

Remove the rind and seeds from the pumpkin  (they also have medicinal use and for the reason of not going too abstract shall include in separate recipe)

Take the pulp of the pumpkin and dice into cubes or bite size pieces.

In a pan take 1/2 tsp ghee add 1sp fennel (saunf) seeds and 1sp fenugreek ( methidana) seeds
.
.
Now add diced pumpkin , cook on slow flame till pumpkin turn soft one may add water to prevent from sticking
.
.
One can also bake the pumpkin pieces in the oven after adding the first tempering to give texture to the pumpkin pieces
My daughter shows more interest in Owen cooked as pan-cooked is too soft for her preference
.
Later, add a double tadka (tempering) with black mustard (rai) seeds & kadi patta later to add some depth in flavour
In the end I added some jaggery to make it yummy so that my kid would it
.
Anchoor or dry-mango powder adds another dimension to this (optional)
.
Serve with poori or on its own or like a chutney
.
